Mount Professor Teaches Advanced Class on the Science of Beer at Flying Dog Brewery

(August 2, 2017) - Flying Dog Brewery will host Garth Patterson, Ph.D., assistant professor of chemistry and vice chair of the science department at Mount St. Mary’s University on Friday, August 4 at 6 p.m. for his class, “Beer 401.” As the advisor for the Mount’s brewing club, Patterson has also been brewing his own beer for five years.

“Beer 401 digs into the science of beer by exploring: the impact of water pH; what chemically is causing specific flavors from hops and other ingredients; the enzymatic pathway to the production of malt sugars; and how to quantify the color of beer,” says the brewery’s website. The event is part of Flying Dog’s Higher Beer Education series, dedicated to ongoing education for those with an appreciation for creating craft beer.

“Flying Dog has been very generous in the support of the Mount’s brewing club and of my “Science of Brewing” class, and they have given us the forum to demonstrate the practical aspects of our research and provided an opportunity for the university to engage with the greater community,” says Patterson.

Additionally, he oversees undergraduate research on vapor phase analysis of a variety of targets including detection of explosives and the aroma generated by hops in beer. Patterson has published extensively on mass spectrometry, creation of field hardened instrumentation, and he holds more than a dozen United States patents. He also holds a doctorate in analytical chemistry from Purdue University and a Bachelor of Science degree from Westminster College.
